Heat up a wok or pan on high heat.

Trim the ends then slice each bok choy in half lengthwise. Add all of the garlic and immediately add the bok choy. Remove with tongs drain well and place on a warm.

Or if they are large cut into quarters. Add some water if it is too dry 1-2 tbsp at a time. Add the rice wine or sherry green onion and the cornstarch.

Add the bok choy stir fry for 2 minutes or until just wilted. Add salt and continue. Add the oil until heated then add the garlic and stir-fry until aromatic.
